Chicken Thighs

I keep talking about chicken thighs but I realized I do not give a lot of information about how to prepare them.  They are really simple to prepare but turn out wonderful in spaghetti sauce.

Ingredients

4 bone-in chicken thighs
Salt
Pepper

Technique

Remove the skin from the chicken thighs (it will just get soggy and unappetizing)
Generously apply salt and pepper
Place them on a cookie sheet covered with foil
Cook at 350 degrees for approximately 30 minutes
Remove from the oven and place in the spaghetti sauce

A few notes. The thighs will be about 75% cooked when you remove them from the oven. You could put them in raw, but then all of the fat will render out in your sauce and you will have to skim grease off the top of your sauce.  By baking them most of the way through you will render out a lot of the fat.  Bone-in chicken thighs add a lot of flavor to the sauce and the meat will literally fall off of the bone after an hour or so in the spaghetti sauce.
