This recipe will work for kid goat or suckling lamb. You must acquire a very young animal still mostly nursing from its mother. Typically a kid or lamb about 40 lbs and about two months old is used. The meat will be very tender and very pink. We eat this for Easter. Craigslist is a good place to find your animal. The wine and flour will make a natural gravy that is just heavenly. Once you do this, it will be an Easter tradition in your house. I promise!
1/2 kid goat or suckling lamb cut into fairly even pieces
3 sprigs of rosemary
4 cloves of garlic
flour for dusting
salt and pepper
olive oil for frying
1 cup Pinot Grigio wine
Cut 1/2 of the animal up into pieces about equal size. Coat the pieces with flour and shake off the excess. Brown them really well on all sides in a good olive oil. Do this in batches until the pieces are all browned. Place them in a heavy roasting pan (a clay pot was traditional in our house). Season well with salt and pepper. Add the rosemary sprigs, chopped garlic and wine to the pan. Roast for 2 hours in a 350 degree oven. This is absolutely wonderful!
